About this shape
Everybody owns a gingerbread man. Nobody owns the rest of the family, which is why a tray of them always ends up as the same biscuit forty times over. Four different characters here: the plain one with the bow tie, a girl in a ruffled dress, a winking one covered in stars, and one in a santa hat with a candy cane over its shoulder.
The face, the buttons and the icing cuffs are pressed into the dough by the same push that cuts the outline, so a plain gingerbread biscuit comes off the tray already decorated. That is the point of these: you can pipe over the lines later if you want to, but you do not have to. Best on a firm chilled dough. Press straight down and lift without twisting so the candy cane and the hat bobble keep their edges.
